Title: Passion Fruit Butter

5lbFruit, cleaned
1cSugar [depending on taste]
1/4cLemon juice
1/2cButter [optional]

Cook the covered fruit in a steamer or microwave [I prefer the microwave for this recipie -- a whole lot less stirring] until very soft. Run through a ricer to remove skins and seeds. Continue cooking in the microwave or on the stove-top [stirring constantly -- which is why I prefer the microwave] until fruit forms a very thick paste. Taste, and add sugar to taste. Process in a blender until at the desired degree of smoothness is obtained. For utter decadence, add the butter to the fruit before processing. Fill canning jars to 1/2" below rim. Add 1/4" melted paraffin, and process for 10 min.
